This is Thailand's most famous dish and a personal favorite of mine. It's traditionally made with Shrimps, but can also be ordered with chicken, fish, beef or sea food. The taste is strong with lots of herbs and it tastes sour and a bit spicy. The soup is eaten together with plain white rice.

What you need: 4 chili peppers, 3 kaffir lime leaves, 2 stalks of lemongrass, Cilantro, 1 Galangal root, 2 cups of Mushrooms, 3 tomatoes, 2 limes, 3 tablespoons fish sauce, 12 small Shrimps.

How to do: Slice lemongrass and galangal root and add it with the kaffir leaves in boiling water for 5 minutes. Slice mushrooms, tomatoes and chili pepper and add it to the water.

Squeeze the lemons and add the juice with the fish sauce to the water and stir for a while. Finally add shrimps. As soon as the shrimps turns red, turn off the heat. Sprinkle the soup with cilantro and you are done. Serve the soup with plain white rice.
