Som Tam Thai

What you need: 1 big handfull of slivered green papaya, half a hand of slivered carrot, 2 Thai chillies (more if you like it spicy), 2 cloves of garlic, 1 tablespoon of roasted peanuts, 1 tablespoon fish sauce, 2 limes, half a tablespoon palm sugar (can use brown sugar instead), 1 tomato. 5 longbeans, one third of a green cabbage.

What to do: First peel the papaya and then either use a grater or hack with a knive till you have enough slivered papaya. Also sliver the carrot, and place the papaya and carrot on the side for a moment. Grab a mortar (krok) and place into it 2 cloves of peeled garlic and the chillies. Pound them for a few seconds until the garlic is crushed and chilies are reduced to small bits. Squeeze the limes and add the juice with the palm sugar and fish sauce to the mixture. Pound again and try to mix it till the palm sugar gets fully dissolved into the liquid. Slice one longbean and tomato in several pieces and add it with the the roasted peanuts into the mortar. Pound lightly till the tomatoes pieces and peanuts are broken. Finally add the papaya and carrot and mix it all together.

Serve it with additional longbeans and green cabbage on the side.
