This is a really simple gluten-free recipe for a sweet and creamy Thai curry.

What you need: 1 Table-spoon fish sauce, 1 Tea-spoon salt, 2 Tea-spoons sugar, 2 cups coconut milk, 3 kaffir leaves, 200 gram pork or beef, 1 Table-spoon Panang Curry Paste. I use the Panang curry pastes from the "Nam Jai" or "Shine" brands, but almost all curry pastes should be gluten-free.

What to do: First cut the pork or beef in small pieces and set it aside. Then cut the kaffir leaves in small thin pieces and set it aside also. In a pan add 2 cups of coconut milk and the table-spoon of panang paste. Mix the coconut milk and panang paste on a low fire till the paste is completely disolved in the coconut milk. Then add the fish sauce, salt and sugar and mix it again on a low fire. Add the meat to the mix and cook till the meat is done. Place the panang in a bowl and sprinkle it with the kaffir leaves.
