Pad Thai

One of the most common dishes to be found in Thailand. The noodles are stir-fried with lime juice, peanuts and bean sprout and is considered a fast food.

What you need: 400 gram rice stick noodles, 3 tablespoons fish sauce, 2 limes, half a tablespoon sugar, 2 tablespoons glutenfree soy sauce, 1 tablespoon glutenfree chilli sauce, 2 tablespoons vegetable oil, 2 eggs, 200 gram boneless skinless chicken breasts, 3 cloves of minced garlic, 4 thinly sliced shallots, 3 cups bean sprouts, chopped chinese garlic chives, 2 tablespoons of slightly-crushed roasted peanuts.

How to do: Soak the noodles in warm water for 15 minutes. Then drain it and set it aside for a while. Put 1 tablespoon of oil in a wok and heat it up and add the 2 eggs. Stir till scrambled and place it in another bowl. Wipe the wok and add another tablespoon of oil. Chop the chicken in small peices and fry it together with the minced garlic. After 2 minutes, add the sliced challots and fry for another 2 minutes while occasionally stirring.

Squeeze the lime in a different bowl and mix the juice with the fish sauce, soy sauce, sugar and chilli sauce. Add the mixture to the wok together with the scrambled eggs and bean sprouts and stir it all together. Stir and fry untill the bean sprout are beginning to wilt. Finally add the noodles to the wok and mix it again. Warm up the mixture, serve it on a plate, and sprinkle the roasted peanuts and chinese garlic chives on top of it.
