Miang Kham

Miang Kham is a traditional Thai snack made with "Erythrina Fusca" leaves, or "Piper Sarmentosum" leaves. In Thailand the leaves are called: "Cha phlu" and "Thong lang". The snack has a spicy, sweet and sour taste. On the streets in Thailand you can usually buy it in a bag with all the ingredients already prepared so you you just have to wrap the ingredients up in the leaves. If you're not in Thailand, you can follow the below instructions on how to make it.

What you need: Piper sarmentosum or Erythrina fusca leaves. If those are not available to you, then you could use spinach or lettuce leaves instead. 1.5 cup grated coconut, 6 tablespoons small dried shrimps, 6 tablespoons unsalted peanuts, 3 shallots, 5 chilies, 6 oz ginger, 2 limes, 2 oz galangal, 1 tablespoon shrimp paste, 8 oz palm sugar, half a teaspoon salt.

First make the sauce. Use a mortar and pestle to crush 1 shallot and 2 oz galangal together and then add 2 oz ginger, 1 table spoon dried shrimps, half a cup grated coconut and the shrimp paste. Mix it well and crush the mixture again. Place the mixture in a pot with 1.5 cups of water and warm the pot on a low to medium heat. Break the palm sugar in little pieces and add it to the mixture. Add the salt andd bring the mixture to a boil while stirring. Continue boiling till the mixture gets thicker and most of the excess water is evaporated. Place the sauce in a small bowl and let it cool down.

Then make the filling: Cut the chillies, the rest of the ginger and shallots, and lime in little pieces as shown in the photo. For the lime you should keep the peel attached to its interior. Roast the peanuts and 1 cup grated coconut on a pan on low heat till the coconut turns light brown. Then place everything on a plate ready for serving.

To finish the Miang Kham, you place a bit of everything on a leaf depending on your taste and add a bit of the sauce on top of it. You then wrap it up in the leaf and you can continue to make the next one.
